This herb comes from the fragrant stigma tips of lavender flowers that bloom in the fall, dried to make the spice saffron. Saffron consists of three deep orange-red stigmas that look like loose threads. It has an aromatic and pleasantly bitter flavor, and is used as a carminative, diaphoretic, and emmenagogue (blood moving) herb. Its origins are obscure, but it is believed to have come from the eastern Mediterranean, probably Greece, Asia Minor and Persia.

It had many and varied, particularly medicinal uses. In modern times, however, saffron is used almost exclusively as a culinary seasoning and to color food.
